Where Mon Rêve
(My Dream) Began
After pursuing different careers to find my path, at the age of 46, I finally re-aligned with what brought me the most joy as a little girl: desserts!
Inspired by the fine art and exquisite taste of French pâtisserie, I followed my passion all the way to Paris, on a mission to learn everything I could from the very best in the industry. I attended numerous workshops at various institutions including L’École Ritz Escoffier, L’École Lenôtre in Paris, as well as Le Cordon Bleu in London, before completing the five-month Intensive Professional Pastry Program at the renowned L’École Ferrandi.
My mission’s grand finale was training with the talented pastry chefs at the beloved Hôtel Plaza Athénée in Paris, where the celebrated Michelin-starred chef Alain Ducasse commanded the culinary scene.
Upon returning to San Francisco, I interned at the award-winning Arsicault Bakery, where the croissants are (dare I say) even better than they are in France! And ultimately, I honed my chocolate-making skills with the royalty of chocolate: King Kriss Harvey of Beverly Hills and Queen Melissa Coppel of Las Vegas.
Now I’m home in Marin County and thrilled to share the jewels of my trade with you! I’m passionate about simplifying traditional techniques and making the art of French pâtisserie and chocolate confectionary accessible to all.
I’m grateful that my dream became a reality and hope to inspire you to make your dreams come true, too!
