TEA PARTIES

In this private 2-hour demonstration class for you and your friends, you’ll learn the most versatile recipe (pate a choux) for making French pâtisserie and will learn to temper chocolate to make confections at home.


Pick one item from each of the lists below:


Pâtisserie:

  • profiteroles with vanilla ice cream & chocolate sauce

  • cream puffs with chantilly cream 

  • éclairs topped with vanilla or chocolate glaze

  • croquembouche (small cream puffs w/ caramelized topping)


Chocolate:

  • fool-proof chocolate-dipped confections

  • chocolate bars using chocolatier molds studded w/toppings

  • mendiants and roasted nut-enrobed chocolate barks

We’ll enjoy this as a tea party: I’ll be serving my own blend of Persian black tea with cardamom from a samovar, along with delicate financiers and, of course, all the pastries made in class.
